Our 3 happy foodistas 12H03 prepared a new recipe to celebrate spring: the avocado coconut lime pie.
Known for its many nutritional qualities, avocado is enriched with more than twenty minerals and vitamins, as well as essential fatty acids effectively fighting against dryness and skin aging.
Limes are rich in vitamin C, copper, iron and fiber. It also provides vitamins B, calcium, potassium, phosphorus and magnesium. It promotes liver activity and a good transit, allowing the elimination of toxins. Lime slows down the aging of tissues and gives you a fresh complexion !
List of ingredients for the pastry
For 4 tarts
-60g of whole almonds
-150g of dates
-20g of grated coconut
-2 tablespoons of melted coconut oil
List of ingredients for the avocado lime filling
-1 ripe avocado
-1 organic lime (all juice and half zest)
-2 tablespoons of agave syrup
-1 tablespoon of coconut milk (the tough part is better)
-1 tablespoon of melted coconut oil
For the pastry
Blend the almonds to powder. Then, add the dates in two or more stages. Pour it into a bowl and add the coconut, melted coconut oil and mix well. Divide the pastry into 4 parts and place them in 4 tarts pans, preferably with removable bottoms. Pack the pastry on the bottom and sides of the pan and place in the fridge for at least 1 hour.
For the filling
In a blender, blend all ingredients together to obtain a smooth creamy mixture.
Pour the cream in each tarts, smoothing with a spatula, and chill for at least 1 hour before finishing.
Gently remove the tarts from the pans and arrange thin slices of lime, grated coconut and selected edible flowers.
