- Categories : Our recipes

Sunny days! In the sky as well as in our plates. So what could be better than a fresh, light and tasty salad? Since we prefer to spend time outdoors rather than in the kitchen, the season is perfect for quick recipes, and our foodistas 12H03 have just what you need: a fruity salad!

Fruity salad

(for two people)

140g of quinoa

120g of chickpeas

100g of cherry tomatoes

1 avocado

1 nectarine

Some cherries

Some blackberries

For the seasoning :

2 tablespoons of olive oil @parcelle26

2 tablespoons of balsamic vinegar

1 tablespoon of honey

salt and pepper

Cook quinoa according to package directions and let cool.

Drain the chickpeas.

Rinse the cherry tomatoes and cut them in half.

Slice the avocado and nectarine, then pit the cherries and cut them in half.

In a @maisonvessel bowl, combine the quinoa, chickpeas and cherry tomatoes.

Add the avocado and nectarine slices, cherries, blackberries and basil.

To spice up your salad even more, you can also add feta cheese and cashews!

For the dressing, in a small bowl, mix the olive oil, balsamic vinegar, honey, salt and pepper. Pour it all over the salad, mix and enjoy!
